Terri Simmons was invited with Eddie Spence MBE to join the McVitie's Cake Company team to help produce a cake for the Diamond Jubilee of her Majesty the Queen. The cake, which was gifted to Her Majesty and used in the Jubilee celebrations, had five distinct layers and involved a wide range of different icing and decoration techniques. Terri supported the project by producing and colouring various panels required for the decoration of the cake.
I became interested in cakes from an early age watching my gran make birthday cakes for all the family. Blue icing for the boys and pink icing for the girls. I trained and worked as a chef for 12 years. Starting as a commis chef in a private hospital, I went on to work as head cook in a home for children and young adults with severe learning difficulties.
